Year 7: Fruit Muffins



        150g self-raising flour

        1 teaspoon baking powder

        60g margarine or butter

        60g caster sugar

        1 egg

        100ml full fat plain yogurt

        80g blueberries

1.     Pre-heat oven to 200 degrees. Place paper cases in muffin tin.

2.     Melt butter/margarine in a small bowl you can do this in the microwave, be careful not to overheat. Set aside.

3.     In a mixing bowl put flour, sugar, baking powder and stir.

4.     Using a fork mix together egg and yogurt, add melted butter and put this into flour mix, stir until combined. Add blueberries.

5.     Divide evenly between cases and bake 20-30 minutes, until well risen and golden.
